Lemon Crisps

Easy cake mix lemon cookies.

Lemon Crisps

Yield: 4 dozen

INGREDIENTS

  • 1 (18.25 ounce) package lemon cake mix with pudding
  • 1 cup crisp rice cereal
  • 1/2 cup butter
  • 1 egg

 DIRECTIONS

  1. Preheat oven to 350 degrees F (180 degrees C).
  2. Melt butter or margarine over low heat.
  3. Stir together all ingredients, including butter or margarine, and mix well.
  4. Shape dough into 1-inch balls and place them about 2 inches apart on ungreased cookie sheets. Press flat with thumb.
  5. Bake for 9 minutes or until edges are golden. Cool on cookie sheets one minute. Remove to wire racks to cool.
