Baker Perkins Unveils All-in-one Cookie Dough and Filling Machine

Baker Perkins, a leading international food technology and equipment manufacturer, recently announced their new innovation, the Wirecut Encapsulation Module. For the first time bakers are now able to create high value filled cookies using one unit. This process previously used separate units to create encapsulated cookies.

Keith Graham, Marketing Manager at Baker Perkins said, “There is a growing market for filled cookies and this is part of a developing niche for more luxury and indulgence in this category.”

The Wirecut Encapsulation Module can work with a variety of fillings, including chocolate, caramel, cream, peanut butter, or jam.

The process works by producing a continuous stream of filling which is pumped into the dough cylinders. Then a set of iris-die cutters pinch the dough and filling together to force the dough to completely enclose the filling. Finally, the encapsulated cookies travel on a conveyor to pass under a gauging roll which ensures the cookies are all the same thickness.

The TruClean Encapsulation Module can be attached to new or existing wirecuts and can be used to create cookies, encapsulated cookies, bars, and filled bars.
